Would describe this past weekend. Friday night, we stayed in and I made taco salad for dinner and we watched Book of Eli. I really enjoyed it and it kind of made me think about how the world works these days with everyone
needing wanting more and more of everything. At the end of the day all you really need is your faith and the basics. I would recommend it.
On Saturday morning I thought I'd try making a breakfast Frittata. I was really surprised how quick and easy it was and I loved the fact that it was different. I feel like we always have the same old breakfast menu every weekend. So if your like me and want to try something easy to mix it up a little bit here is the recipe.
Ingredients: FYI: I'm guessing at the measurements b/c I eyeballed how much veggie and egg I used but it should be pretty close. ;) Just use how much you would like....you can't mess it up. Oh, and for my friends that aren't fans of veggies you could sub veggies for ham instead. That's for you Ash! ;)
- 1 c of vegetables (your choice and you can use more veggies...just eyeball it)
- 5 eggs
- 1 T of feta or parmesan cheese
- salt and pepper
Preparation:
- Preheat oven to 350 degrees.
- Place 1 c. of sauteed vegetables to small nonstick pan over medium heat. Use your favorite. I used onions, spinach, mushrooms, bell pepper, and tomatoes.
- Beat your 5 eggs in a bowel, salt and pepper the eggs and then poor the eggs over the vegetable mixture in the pan. Move mixture around until slightly solidified. Transfer pan (with ovenproof handle) to oven.
- Bake until frittata is almost firm to the touch. Sprinkle with feta or parmesan cheese bake until firm.
- Voila!
Saturday afternoon it was a beautiful 75 degree day outside. Matt and I took the top off the Jeep and went to some different tile stores looking for flooring and back splashes for the kitchen. We finally decided on everything and Friday the guy is coming to measure!! So exciting but I'm nervous at the same time b/c this is going to be a HUGE renovation and so please pray that it goes smoothly without too many hiccups!! Saturday evening we went to dinner with some of our friends Monte & Brandy Farquhar. We decided to go try Simply Fondue and it was AMAZING!! So very de-lish!! We were all stuffed by the time the chocolate fondue came but we all managed to make room!

After fondue, we decided to go to Times Ten Wine Cellars and have a glass of wine. It's one of Matt and mine favorite places in Dallas b/c it has a really laid back atmosphere and they have really good wine that they make in house. The grapes they use are flown in from Cali and they also use some Texas grapes. After a glass of wine, it was still early and so we decided to go to one more stop before calling it a night. We had a great evening with the Farquhars!!!
On Sunday, we went to the movies and saw No Strings Attached. It was really cute and really funny! Matt and I both enjoyed it. It was a great weekend and I hope all of you had a great one as well!
